Ragu alla Toscana

Ingredients for 6 people:

 

2 Celery sticks
1 Carrot
2 tablesppons parsely
1 Onion
1 kg Mince meat (beef)
1 Glass - 0,25l Red wine
0,5 kg peeled tomatoes
1 Tea spoon tomatoe paste
1 Tea spoon salt
4 Table spoons "Extra virgin Olive oil"

Preperation

Peel and chop the onion, wash and chop the celery and carrot into small pieces. Warm the olive oil in a pot, add the onion, celery and carrot and simmer with a table spoon of water(*)
Add the mince meat and fry until it appears cooked.
Add the glass of redwine and cook until the alcohol is evaporated. Then add the tomatoes, the salt and the tomatoe paste. Stir well and cook over gentle heat for one hour.

(*)The secret of adding water or white wine to the olive oil is to keep the temperature constant at a 100 degrees. The water or wine is converted to steam and a slow and even cooking can take place.

ANTIPASTI:
Crostini di fegatini di pollo, crostini con olio extra vergine, pomodori e fagioli, verdure grigliate ( peperoni, melanzane, zucchini), Affettati (salame e prosciutto), formaggi (pecorino e parmigiano), insalata di pesce .

PRIMI:
tortelli, pasta pasticciata, pasta con ragout, pomodoro, verdure, vellutata di zucca, zuppa maremmana, acqua cotta, purè di fave e cicoria, pasta con zucchini, pasta o riso al pesce (tonno, dentice, cozze e vongole), cacciucco, garmugia.

SECONDI:
pollo alla cacciatora con patate, pollo arrosto con patate, cinghiale con olive, agnello con menta e carciofi, polpettine alla menta, arista e zucchini fritti, roast beef con verdure, salsicce con insalata, involtini con spinaci, pesce fritto con insalata, pesce arrosto con verdure.

DOLCI:
alla ricotta, con le mele, con le pere e cioccolato, cheese cake, papassini, al riso.
